OAXACA

Nestled within Mexico's heart, Oaxaca stands as a shining gem, celebrated for its unparalleled cultural richness, tantalizing gastronomy, and breathtaking beauty. The city of Oaxaca, with a population of 300,000 inhabitants, is the capital of the southernmost state of Oaxaca. Oaxaca is bordered to the north by the states of Veracruz and Puebla, to the east by Chiapas, to the west by Guerrero, and to the south by the Pacific Ocean. Surrounded by the Sierra Madre Mountains, Oaxaca lies in a broad and fertile valley 5,000 feet above sea level.

Over the years, these mountains have been reserved to protect and preserve the cultures of the Zapotec, Mixtec, and other Indian groups. The Aztecs dominated Oaxaca in the last part of the fifteenth century and were the last Indian stronghold before the arrival of the Spanish. Today, Oaxaca is the Mexican state most known for its rich mixture of indigenous people, customs, and languages.

Renowned as one of Mexico's most captivating cities, Oaxaca has an abundance to offer - from vibrant markets and artisanal crafts to delectable cuisine, a plethora of museums, enchanting Spanish-style churches, and a thriving arts community.

Oaxaca is renowned for its moles, a dish closely associated with Mexico as a whole and often referred to in the US as "Mexican chicken" or "chocolate chicken" due to the inclusion of cocoa in most mole recipes.

Oaxaca is proudly known as the "Land of the Seven Moles," boasting an extraordinary diversity of this culinary delight. Mole is a cherished delicacy typically reserved for special occasions, national holidays, family gatherings, and celebrations honoring the patron saints of the pueblos. Indulge in the rich flavors and cultural significance of this unique Oaxacan delight!

Mole contains a mix of new and old world ingredients: dried chiles, tomatoes, and seeds from the Americans, and spices that had been brought by Spanish and Europeans.

Chapulines are another Oaxacan specialty. Chapulines are grasshoppers of a variety of sizes which are fried and salted and enjoyed all over the city. Tacos are the best option.

PANAMA

Panama, a nation at the heart of Central America, is a cultural treasure with an intriguing history and stunning landscapes. Its rich blend of indigenous, European, and Afro-Caribbean cultures creates a unique and diverse identity.

Nicaragua, a nation located in the heart of Central America, invites you to embark on an unforgettable journey into the richness of its culture and the beauty of its natural landscapes. This cultural exchange will provide us with the opportunity to get to know and appreciate the vibrant traditions and diversity that characterize this enchanting country.

Nicaraguan culture is a mosaic of indigenous, European, and African influences that intertwine to create a unique identity. Celebrations and festivities, such as the colorful religious holidays and the Carnival of Santo Domingo de Managua, reflect the joy and passion of the Nicaraguan people.
